Coupon classes

It seems like this couponing thing has grown. The economy has made it to where people are becoming more interested in learning how to save money on groceries. That seems to be the only place in the budget with the most wiggle room. I taught a couponing class for a frined's MOPS group & due to the postings on facebook there seems to be a lot of interest. So it looks like I will be taching couponing. Who knew this would turn into a business? The Lord works in mysterious ways.

I will also be creating a facebook profile for this account. I will now be posting deals I find under that name instead of my personal name so as to allow more people access to me. (My personal account is not a place for strangers to be...lol) So anyway look for me on FB soon.

Menu for week of 4/11-4/17

I just make a dinner menu plan as both kids eat at school & whoever is home either eats leftovers or sandwiches.

Monday- London Broil w/ veggies & salad

Tuesday- Bean Enchiladas (we try to go meatless at least once a week.)

Wednesday- Chicken Jambalaya

Thursday- Chicken Creole

Friday -Chicken Ettouffe

Saturday- Leftovers

Sunday- Broccoli Bread

Right now chicken is cheap in our area so we will be eating a lot of that.

This week

This week I plan on being busy as next week is a school holiday.

Today I plan on volunteering at my youngest's school. We are making shirts for their Mardi Gras parade on Friday. They will be the Krewe of Polka Dots. I think the kids will have a lot of fun with it. Tuesday I have some major shopping to do as there are quite a few deals out there. I spent some time yesterday planning these out. Wednesday & Thursday I hope to get some freezer cooking done & Thursday afternoon we have girl scouts & our cookies should be in. Friday morning is B's parade then this weekend I have to take C to a slumber party, B to a gymnastics party & fit in girl scout cookie booths at some point.

Interested to see how much actually gets accomplished. One can dream right?

Oreo Truffles

I got this recipe out of a cooking magazine & made these. OH MY YUM! Are they ever good. I hope you enjoy them as much as we do.
Oreo Truffles



36 oreos (original) (I have used mint ones at Christmas & liked them)



One 8oz pkg cream cheese (at room temp)



Melting chocolate (white or chocolate…..not chocolate chips) (I use Almond bark)



Directions



Crush oreos into fine crumble….no large chucks then mix with cream cheese. I find it easiest to do this in a food processor. Roll into balls. Bigger than a marble but smaller than a golf ball. Place on plate that has wax paper on it. Refrigerate about 30- min to firm. Dip each ball in melted chocolate & place back on wax paper & put back in fridge till firm. Store in fridge until ready to eat.



I make them big enough for 2 bites….any bigger & it will kill you.



Don’t use double stuff or reduced fat or golden…..just get the plain original.

Ending the morning stress.

So used to my morning were spent with me constanly on my daughter's case about being late for the bus. I felt like Big Ben. TWENTY MINUTES!! TEN MINUTES!! FIVE MINUTES!! NOW NOW NOW!!!!!
Now.....we no longer have that issue. And she has never missed the bus & I am not yelling. (Unless she just won't get up but thats another post all together.)

Do you want to know the secret to my success??? Ok.....I'll tell you.


A timer! Yes an inexpensive kitchen timer is my new BFF. I go into her room & wake her & start the 30 min count down clock. I hear it beep at the 10 minutes till, 5 minutes till & at the 0:00 marks. She can see just exactly how much time she has & it frees me from standing over her like the time nazi.

Now she is in 6th grade & this has worked well for us. I wish I would have started this sooner. I think by first grade at least they should be able to get the concept of count down time.

If any ready has any secrets for a smooth morning that they would like to share please feel free. I am always open to suggestions.
